Tert-Butylhydroquinone(TBHQ) is an effective edible lipid antioxidant, molecular formula C10H14O2. TBHQ can prevent or postpone the lipid oxidation effectively, have the bacteria static activity concurrently, can protract food storage life greatly.
Application: TBHQ can be used comprehensively in fats, oils and fat emulsions, canned nuts and seeds, instant noodles (pre-cooked noodles and rice ), biscuit, cured non-heat treated processed meat, poultry and game products, dried fish and fish products, fried food, bakery/fried nuts.
Dosage: according to GB2760, the maximum dosage is 0.2g/kg .
Usage:
1. Direct method: Add TBHQ into food ingredient and mix equality; or preheat the lipid to 60~90C, add TBHQ and stir it to dissolve evenly.
2. Proportion method: To confect 5% concentrated TBHQ solution according to the direct method,then add the solution directly into the lipid in the proportion of 4g/kg,and stir until it distributes evenly.
3. Spray or dipping method: For canned nuts and seeds, roasted seeds and nuts, cured non-heat treated processed meat, poultry and game products, dried fish and fish products, dissolve TBHQ in edible alcohol in the proportion of 5g/kg, then spray it evenly on the surface of products or dip the products in the solution.
